Berries on French Toast

YUMMY! A perfect meal for a Sunday brunch or right after a long, hard training session!


Serves: 4

Preparation time: 10-15 minutes

Cooking time: 4-5 minutes each


Ingredients:

8 slices of your choice of bread (fruit toast, ciabatta, gluten free options)

4 eggs

½ cup milk (dairy or non dairy – your choice)

1 tsp cinnamon

2 tablespoons sugar

Coconut oil for cooking


Toppings:

Sujon berries

Cream

Coconut yoghurt

Jam

Maple syrup


Method:

Whisk eggs, milk, cinnamon and sugar until all combined.

Heat a pan and add a tsp of coconut oil, so the bread doesn’t stick.

Dip and soak (for a minute or two) two slices of your chosen bread into the egg mixture and place into the hot pan for a minute or two on each side, or until golden brown.

Serve with yoghurt or whipped cream, a generous helping of Sujon berries, Jam, a drizzle of maple syrup and a dust of cinnamon.


You can also sprinkle over Blackcurrant superfood powder.
