Sauces - Raspberry Coulis

1/2 cup of sugar
4 Tbsp of lemon or lime juice

Place ingredients into saucepan and bring to the boil. Reduce heat and simmer until the raspberries are soft (about 5 minutes). Transfer to the food processor and process until smooth. Strain into a jug and refrigerate ready for use.

The Raspberry Coulis can be used in a variety of ways including Deep Fried Camembert cheese wedges served on a raspberry coulis. It can also be poured over fresh fruit salad as an alternative to cream, or an interesting addition.
